Our second coffee release comes from the fabled Caballero Estate.
High in the hills of Marcala, in western Honduras, the Caballero family has been cultivating coffee for generations. Today, Marysabel and Moisés Caballero carry forward a legacy shaped by Marysabel’s father, Don Fabio Caballero — widely considered the godfather of Honduran specialty coffee. His lifelong commitment to thoughtful, quality-driven farming helped elevate both the region and the country’s reputation on the world stage.
Marcala’s cool mountain climate, fertile clay soils, and defined dry season create ideal conditions for slow, even cherry maturation. But the Caballeros don’t rely on climate alone — their approach to cultivation is deliberate, experimental, and deeply sustainable.
They space their coffee trees farther apart than conventional practice, reducing competition for nutrients and sunlight. What appears sparse to the untrained eye actually produces stronger plants, higher yields per tree, and dramatically lower disease loss. Over time, the land becomes healthier, the ecosystem more resilient, and the cup quality unmistakably elevated.
This coffee is 100% pure Catuai. Under the Caballeros’ meticulous care, it reaches a clarity and expression that far surpasses its usual reputation. Their farming and processing unlock the full potential of the variety, transforming it into something articulate, sweet, and quietly complex.
From selective handpicking to slow drying on raised beds, every step of the process is carried out on the estate with precision and a deep respect for the environment that sustains them.
