Similar to our last release from Honduras, this coffee showcases potential unlocked with an intentional coffee growing philosophy and open minded experimentation.

Nelson is a master of the Castillo coffee plant species, using a controlled 48 hour fermentation to balance complex fruit flavors while still proudly representing classic Colombian texture and body.

ABOUT THE COFFEE

Coffee Species: Castillo. This is a modern species of coffee. Developed in the early 2000’s by the National Federation of Coffee Growers of Colombia, its been bred to excel in the specific conditions of Colombias coffee growing region. A descendant of the Bourbon varietal, Castillo becomes a conduit for terroir and technique. This lot from Nelson Cruz is a great example of potential unlocked through care. 

Processing: 48 Hour Washed. After the coffee cherries are picked, they are carefully stored in a fermentation friendly environment for 48 hours. During this extra contact time between the bean (seed) and the fruit, a deeper sweetness develops, acidity softens, body increases and the finish is lengthened. Then, the coffee is washed in the traditional process that creates the structure and clarity we love in a washed coffee. 

BREW GUIDE

This coffee responds best to low filtration and high dosing. We like using april filters and a fast extracting dripper. Grind a bit finer too.
